Great knife, Great steel, Great value!
So to start this review I would recommend this to just about anybody looking to buy a more budget friendly flexible boning/fillet knife. BLADEThe steel is X50Cr15MoV and is similar in carbon content, and will perform alot like 420HC. This is actually one of the steels that Victorionox and Wusthof use. This will be extremely stain resistant and easy to sharpen, but I will not be doing that anytime soon because this came sharp as a razor. The only con of this is how the grind lines are still visible. Not a huge problem for me though. GRIP/ERGOThe handle is a black rubber with slight texture that is not perfectly smooth to the touch, but will lock your hand in like a bear trap. It appears to be a full metal construction wrapped in the textured rubber. The blade will flex about 1/2 to a 3/4 of an inch sideways. The balance of the knife is about 1/2 an inch past where the black rubber wrap starts. The ergonomics are great. The handle may give you a slight blister after 4-5 hours of use, but how many of us actually use a fillet knife that long? The bolster on the backside of the knife is very grippy and will not let your hand slip out, the front on the other hand, is a little slick because it is made of that solid chunk of steel luckily it comes down to a 90 degree angle to still successfully stop your finger from going on a joyride around the kitchen, without you. Nice knife
While this is not top quality German steel, it does just fine at half the price. The handle could be a bit more comfortable, but the blade is razor sharp. If you want eighth inch tomato slices...no problem! I recommend this.

Love the 7-Inch Forged Flexible Fillet Knife
Genesis 7-Inch Forged Flexible Fillet Knife: I really love this knife, not just for filleting, but for many cutting tasks where a very sharp, thin blade is useful. Like all of the Genesis line, the handle is very comfortable and provides a secure grip. I've had it for about a year. It's held its edge very well and still looks brand new.

Reminds me of my Wustoff Classics
Reminds me of my wife's Wustoff Classics in the kitchen. It has that balance, bolster, razor sharp blade (that dies hard), and serious quality. Used first time to fillet and bone a fat bigmouth bass & it felt like cutting through warm butter compared to my old disposable Wal-Mart fillet knives.

Mercer Genesis fillet knife
Wonderfully sharp, right out of the package. Holds its edge well, and the handle is great. Can't ask for more, especially at this price point.

Usable
No tiene un súper filazo, de hecho venía sin filo, hay que pasarlo por la chaira, pero sí es flexible y ayuda a rebanar. Me parece caro para tener que estar pasándolo por la chaira de nuevo.

Muy buen cuchillo
Muy buena calidad de cuchillos, creo que comprare mas tamaños y hacer mi colección de buenos cuchillos. El envío fue mas lento de lo esperado, mas sin embargo fue bueno.
