Yes. It outputs linear voltage with the zero point at 1/2 exitation voltage. Therefore -3g = 0v and 3g = 3.3v

Q: Can this item detect whether a stationary object - like a platform or table top - is level?

Indeed, that is the main benefit of this item. The higher the price the better accuracy they have.

Q: The adxl335 has 7 holes then why does the header strip have 8 pins? one of them cannot be soldered on the board.

They are breakaway pins. Use a knife to remove the extra pin.
