Ecolution EVBK-5132 Evolve Grande Fry Pan, 12.5 Inch, Black

I bought this pan to replace a very old teflon pan. I was attracted by the Hydrolon coating and padded handle, and it has proven to be an excellent purchase decision. It is true, as another reviewer said, that there is a slight hump in the middle and standing oil puddles along the outside edges. However in actual use it is a non issue. I use the pan for tofu-veggie stir fry, and once the veggies go in and get stirred around they get coated with the oil and there is none left to puddle, because I only use three teaspoons of olive oil for the whole thing - the coating is that good. So the oil use is minimal (good olive oil is expensive!) and results in a very tasty meal. I got this large version so that the large amount of veggies I cook can all be in contact with the pan all the time, which makes the whole thing go more quickly. I also found that the pan heats very evenly. The flat bottom is 10.25" across and my largest burner is 7.4", so there's about 1.5" of pan all around that's not on the burner. But veggies on those outside edges cook at the same rate as those in the center. The padded handle is very comfortable, and cleanup is very quick and easy. This is easily the best pan I've ever used.

This pan is enormous! I love it, it's great for all kinds of things, totally non-stick, heats up well. I made an enormous frittata in it the other day and even put it up under the broiler (handle outside the oven) and it did great, frittata slid right out on to the cutting board. The sides on this are almost straight up and down which means the bottom of the pan is just about as wide as the top. The thing is 'UGE! (I have mentioned how big it is?) (not heavy though, thank you aluminum!) (or as the Brits say al-YOU-min-EE-um). I got a small cranberry colored one as a Vine review product and I loved it, it made me go ahead and risk paying for the big pan and it was worth every penny. It's held up well so far, 2 months later, but I use non-stick safe utensils (most of the time) and so, I give it FIVE STARS, BABY!! Check it out, I say, with utmost confidence, BUY THIS PAN!!

I bought the Evolve 12.5 inch and the Evolve 9.5 inch fry pans for use at a second home. When compared to other pans of similar quality that are widely available, the Evolve are a great deal. Comfortable handle. Nice weight/heft. Oven proof to 350°. Used on electric coils, the pan heats reasonably evenly (probably be better on gas). I've used for grilled cheese, various styles of eggs, bacon, sausage, pancakes, fried grits, fried potatoes, stir fry veggies, and more -- the nonstick works well and cleanup is a breeze. You can buy thinner and cheaper fry pans, or upscale gourmet fry pans, but I don't think you will find too many better pans for the money. With these and a couple cast iron skillets I have most of what I need in the kitchen.

I love the size of this pan, and this was a replacement for the same one that finally died, as all non-stick cookware does. The only thing I wish is that it came with a lid, since all my other lids are for 12" pans, and it's hard to cover it when you need to. But I still give 5 stars, since I knew it didn't have one when I purchased it. I take the view that non-stick pans are really disposable pans, and since the non-stick surface seems to be just as durable as most other non-stick, I'm certainly satisfied.

Really great pan. Love it so far. One note, do not use any metal utensils with it!!!! I figured I'd be safe using my metal spatula for pancakes while my rubber one was on order. Even with being careful, I managed to scratch the surface up a bit.To me, that's still not really acceptable, seems to point to low quality, but I still would say this item is good and I haven't caused any more damage since using all wood/rubber utensils.

My one complaint is that I don't have a lid that fits it. There is an odd, flattened portion of the rim where the handle attaches, which is likely made that way for structural stability. It prevents you from using a lid that completely closes the pan. I mostly use it for stir-fry and it is wonderful for that, but not having a fitting lid is mildly irksome. I would still recommend this pan and may buy another in the future.

Great fry pan! Beautifully made, nice and solid. The nonstick surface performs as advertised. I am very careful to follow all the instructions that the manufacture provided as well as occasionally rubbing the inside of the frypan with olive oil to season it. My only disappointment is that Amazon does not sell a 12 1/2 inch lid to go with it. I bought one in the 8 inch as well. Fabulous pan for a great price.

First I bought the 8.5 inch Ecolution fry pan and liked it so much that I ordered this larger version. What a pleasure! I was using a super stainless fryer but the poor heat distribution finally did me in. I really couldn't stand it any longer and started poring over what was available on Amazon. These Ecolution frying pans are the best: good heat distribution, food is evenly cooked, they clean up fast. Buy them. You'll love them.
