Does the chocolate stay inside the pastry or does it melt out?

Depends on how large you cut your pastry compared to the chocolate strips. If you have chocolate sticking out then of course it will drip out. If it’s encased in pastry (as it should more or less be) then it won’t. High cocoa content makes it less runny than milk chocolate as well - so less chance of seeping out.
