Q: Where can i purchase the soto fuel canisters that this stove attaches to? i don't see them on amazon.

Search for "isobutane canister ". Any brand will work. It doesn't have to be Soto

Q: Can you unscrew it from the canister in between uses, or once it is screwed on, it has to stay until all the fuel is gone?

The fuel canisters are made to be removed between uses as well as for more compact packing options

Q: What is the diameter of the neck in millimeters? I'd like to fit a snap-on 3/4 windscreen with an internal clip diameter of 10.2mm.

I believe the neck is just a shade under 10.2mil, don't have calipers handy. The other issue is whether the diameter and height of the face provide adequate relief. That is about 47 mil and with the thick lip being 5 high. Best stove I've had for backcountry use beating the Amicus for heat time and efficiency. Interesting project info out there from someone who adapted a JetBoil pot with integrated heat fins that got seriously better metrics for both—but the cup is small. I myself need 800 mL for my routine. But worth a look.
