I use this to make Seitan. It’s an art but you need this to start with. This one is particularly good for Seitan and absorbs added flavourings really well. As a chef, consistency is vital and this profuct gives me that.

When I first heard about seitan as a protein meat alternative I tried the 'mock duck' that H&B sell. I thought it was ok, but a bit pricy, and I also thought it would be one of those things that would be a real faff to make yourself - THAT couldn't be further from the facts - this stuff is incredibly easy to make - and is VERY reasonably priced - what more could you want????

It's really very good quality wheat gluten. I trust this brand, having bought other products of theirs, and this doesn't disappoint either. It's well packaged in a neat brown paper bag. Definitely a brand I will look out for in future, and I have a second order arriving this month.
