Making jello shots I would use the KNOX unfavored Gelatin, Not the gelatin sheet

Q: Is Platinum better than a vegetable gelatin to create a gelatin glaze to dip molded frozen fruit puree?

Gelatin will always be best for glazes since most 'vegetable gelatin' is just agar, which does not work for glazes.

Q: How do I determine what bloom strength to use for different items, e.g. jelly vs. panna cotta?

Bloom strength is selected based on what type of product you are looking for. The highest bloom strength (platinum) is best suited for items where you want the cleanest flavor profile and a crystal clear gel. Panna Cottas and jellies both do very well with platinum. The lowest bloom strength (titanium) is best suited for applications where clarity is not as important. Q: How much does one sheet weigh in grams?

it is so thin and light and it must weigh only a few micrograms. the cover said one sheet works for about half cup liquid. It is very easy to use and so pure. very nice.
