Q: Can this be used to make milk pudding ?

Not sure what milk pudding is. I’ve added it to flan (replacing a tablespoon of milk with it, in a 2-cup recipe). Hope this helps. I certainly wouldn’t replace all of the liquid in a recipe with it. It’s way too intense. Use it more like you would any other flavoring.

Q: Is this a straight liquid or is there pulp in it?

It's an opaque liquid. When it settles I can see sediment on the bottom that has to be shaken. I do not note any fibrous material in the ginger juice. It is great for using when you're in a pinch and forgot to pick up fresh ginger. I keep it in the fridge at all times. I use about 1/2 tablespoon to substitute for 1 teaspoon of freshly grated or minced ginger. And it has a nice flavor.

Q: How much ginger people ginger juice should one add to an 8 oz glass of soda water?

I just use a quick pour, which would be about a teaspoon and a half or thereabouts. Just add to your taste.
