Q: This is probably a dumb question, but what is the difference between a folding tire, a wire bead, and a regular tire?

As the name implies a folding tire is one you can fold and, for example, carry in a back pack so when you blow a tire you can still ride home; great for reducing anxiety when riding alone in a rural region. Wire bead tires stay on the rim much better. For example if you ride a road bike fast with narrow, 25 mm or less, tires on curvy down hills this becomes a safety factor.

Q: Are these the real thing or are they Chinese bootleg counterfeit?

Based on my experience, they seem like the real things. I do a lot of bike commuting and they are holding up very well.

Q: What is the difference between wire beaded and Kevlar belted ?650 tires

I'm going to bypass all the technical stuff. If you look at the Performance Bike website, they sell wire bead and Kevlar foldable Gatorskin tires. They sell more wire beaded than Kevlar and both have approvals over 90%. I conclude that there's no performance difference. The only significant difference is that one can be folded and kept in a small bag while the other retains its circular shape. The ONLY reason I bought wire bead is that I find them easier to mount. Others seem to find foldables easier to mount. That has not been my experience. I think you'll be happy with either.
