Great for breaking down roasts
I like to cut my own ribeyes from a roast to save a few bucks. It also allows me to choose the preferred steak thickness. There are several knives out there to choose from, but the balance of this knife is awesome. It’s Wusthof, so it’s good steel, the tang goes all of the way through, so it’s rigid, and it is scary sharp. Makes quick work of anything this rookie has thrown at it. Love it.

awesome knife
I am in my mid-fifties and got my first wusthof knife at 21 (an 8” chef knife). while probably not the best present for every 21 year old, I have always loved to cook and was always frustrated being anywhere besides my home and getting stuck with dull knives. The wusthof knife has forced me to learn to care for knifes and sharpen them. This has been a knife I have wanted for some time as I butcher a great deal of meat in order to save a few bucks a pound and get the cut I want.The knifes shape is no accident and the feel and balance give you a great advantage when cutting a full ribeye, strip, etc. Can you do it with a chefs knife, utility knife and paring knife? absolutely but can you ever have too many knives or flashlights😊. This is definitely not a first, second or even top 5 knife I would buy for someone getting started. If, however, you know someone like me who is incredibly hard to buy for and loves knives (and is not a vegetarian) this would make for an excellent gift. I can’t remember when wusthof came out with this knife but it’s been several years. I wanted it the first time I saw it, and waited patiently until a good opportunity came along. I have zero regret and will use it for the rest of life!

Great butcher knife, especially if you have big hands like I do
I have probably at least forty various kitchen knives, (I used to be a chef,) also including several "butcher knives," and when I need to use a butcher knive, this has been my "go-to" since I got it. It's definitely made for a person with big hands and comes with a "generous" handle.

Nice finishing piece for my wusthof block. Cuts summer sausage and fresh pet bologna with ease. Because of the inward curve near the tang, you have to pull all the way back as you slice. Your first few tries will be halfway cut until you learn the extra trick.
