Just OUTSTANDING!
Have been using this every day for months! I hope the following helps!Buy some metal (reusable) skewers or just a pack of cheap wooden onesPop this in a zip lock bag with cubed chicken, a tablespoon or two of thick (not cheap watery) natural/Greek yoghurt with half a tablespoon of olive oil. The olive oil servers two purposes, the first is that it makes the spice paste, chicken and yogurt in the zip locked bag mailable so you can mix it properly with your hands.Basically you want the paste/ yoghurt mix in the bag to be orange, the darker the spicier. I like a kind of pastel orange colour when mixed in the bag. I prefer the more subtle taste even though I go for spicier food. But to get this like Tandoori tikka you don’t want too much spice paste/ darker orange colour in the bag.This step sounds a nuisance but please trust me that it makes a world of a difference, chop some fresh coriander finely or if you’re lazy just chick it in whole leaf with stalk. I hate having to do/ buy extra things like this usually, I just want a jar and add to chicken. But with this, trust me WORTH IT!!!Okay now, that zip locked bag with your chicken, yoghurt, Olive oil and coriander (mixed well from the outside with your hands, just work it all together in the bag), just chuck into the fridge overnight or in the morning if need be for dinner later.Just skewer the chucks of chicken with the yoghurt, this spice paste and pieces of coriander thinly covering it.Pop in the grill on med (170c) 8-9mins each side.Now here’s the second purpose of the olive oil, it prevents, along with the natural yoghurt, the chicken from getting that horrible dry grilled taste/texture. It ALSO gives the a very very mild slight charred/smokey taste.Basically what you should have now, will taste just like Tikka cooked in a tandoori oven. I’m obsessed with it, I actually eat it every day...If I could point out one negative for the spice mix, PLEASE MAKE A LITRE SIZE, I RUN OUT SO MUCH!!Oh and this won’t turn out red, that’s just red food colouring that you can add of you also want it to look like typical British Tikka. But trust me, the taste, you won’t want to change a thing, other than your own preference for yoghurt and spice paste ratio and of course the corriander (it gives the most beautiful citrus hint)
