Excellent cheese, arrived in a good package, We use it up in about 5 weeks and keep ordering.. Love the taste and the texture.

I love one the worlds smelliest and best tasting cheese and it use to be in every Grocery store. Only one place in Wisconsin makes it quintessentially German. Well I got it on Amazon years ago and it was costly. Today however it is really cheap like $5 a brick (8 oz) but with a catch. They do not tell you but when you get it it is not mature. So it is bland, nearly every one (comments) agrees. I found a solution: mature it yourself. That does not mean storing it under your pillow. It means a styrifoam cooler with ice packs exchanged twice daily to keep the temperature between 40F and 50F. That number is not rigid: if too low the fermenting gets slower and if the temp goes above it ferments faster. And of course I like the really strong stuff so mistakes are just better!
