what’s the expired date of this 70% chocolate?

The bag gives a "best if used by" date, but I find that the chocolate is 'usable" for some time after that if kept sealed in a cool dry place such as an airtight container in about 70 degrees. I find that it can be used even if there is a light dusty "bloom" on the chocolate. Bloom is perfectly consumable and doesn't affect flavor if melting the chocolate down or chopping it up for cookies.

Do you ship with a cold pack? At $92/bag, I don't want to see it melt before it arrives?

Yes. Until early October, all chocolates are considered perishable and need to be shipped overnight. Overnight orders are all packed with ice.

You have mentioned allergen information: beef. not seen such allergen information on the valrhona website. what gives?

This is an error in Amazon's database. Obviously there is no beef in Valrhona chocolate, of course. Common sense needs to prevail. The chocolate is VEGAN and VEGETARIAN. Funny error -- good catch. Correcting it? That's another problem entirely!
