That may have been one of the best decisions I have ever made about a knife.I own multiple chef's knives by multiple manufacturers, and most of which cost at least 3 times as much as what Sedge is charging for this one. I'm extremely picky about my kitchen tools, and do not easily make a change from a tool I am comfortable with unless something else shows a significant improvement. This knife has been in use for about two weeks now, and I am very, very happy with it. I've put it through its paces, doing everything from deboning chickens to butchering a whole standing rib roast, and it has both held its edge and been highly comfortable to work with. I've already recommended it to many of my friends, including a few who work in professional kitchens. They've all loved it.Do yourself a favor, and get one. ### ⭐⭐⭐⭐⭐ Better than my D2 blade. It’s perfectly balanced, gets a (literally) razor sharp edge and keeps it relatively well. I way prefer AUS8 over 8cr13mov (it’s okay have the cryo), and even over the D2 (O.RAT1 sure it keeps an edge, but try to sharpen it...). ### ⭐⭐⭐⭐⭐ Best value for kitchen knife *by M***S on Reviewed in the United States on February 19, 2019* The knife is very sharp and holds is edge well.
