Is this vegan? I can't tell if some ingredients were cut out of the pic.

Here are the ingredients I am looking at the can Fresh Chili Pepper, Garlic,Chinese Ginger, Shallot,Lemongrass, Salt,Sweet Basil, Kaffir Lime, Sugar, Spices: Coriander seeds, Pepper, cumin, Cardamon, Tumeric, Galangal, Fresh Coriander. (Produced in a facility that also processes Peanuts and Shrimp). 4 oz can 114g absolutely delicious curry brand.

Is this vegetarian or does it contain shrimp?

According to both the current image of the label on another listing for this green curry paste and the ingredoent list given by the person above, it would appear to be vegan. I'm not sure where the respondent got the idea it contained shrimp paste, but it may have in an earlier version. However I would argue depending on the sourcing of the sugar it may not be either vegetarian or vegan since they use animal bone shards to process some cane sugar. I'm not sure if this is the case in Asia but it is in the United States.

What’s the paste to coconuts ratio?

The recipe I use (from "Quick And Easy Thai" by Nancie McDermott calls for 2 to 3 tablespoons to one and one half cups unsweetened coconut milk. I found that 3 tablespoons was on the spicier side so I use slightly less (about 2 1/2 tablespoons). I hope this helps.

How long will this last after opening the jar if I don't use it all at once?

I put the extra into a little ziplock bag and kept it in the fridge for weeks... it will last until you want to use it again, which will probably be within a month bc it’s so good!
