Q: is this designed to be used as a portable countertop unit or is it for installation in the counter?

It is my impression based on the way this item vents that it is designed to sit on the counter with adequate room around it to vent

Q: What do the different settings mean? I just got mine and it didn't come with a helpful manual. What is the difference between "water" "soup" "fry" etc

Only choosing the functions of fry and hot fry can adjust the temperature, while other functions can not adjust the temperature.

Have not tried this,but I am not thrilled with this product. The instructions were so poorly translated as to be unintelligible. Good luck!
