Could you use these for journaling cards. Will they stand up to use?.

The paper is 65# weight. Good and sturdy. I believe it could be adapted to whatever size you need. I'm not exactly sure what size you want for journal cards.

I noticed it says 10 double sided pattern paper but also see sheets with cut outs. Are those cut out pages counted as the double sided scrapbook paper

Yes, those sheets are counted in the pack of 10. Sometimes you have to decide which side you would like to cut up as it affects the other side. You can also copy the sheets but the quality and crispness of the colors are not as beautiful. This paper is a bit expensive but it is the best scrapbook paper I have ever purchased. I have about 10 different sets and love them all.
