Beautiful and functional
This knife is a work of art, and it's also a workhorse. I received the Kyoku Shogun boning knife the day before harvesting two 300 lb hogs. Through two days of cutting and boning I had to run the knife over my sharpener once, about halfway through the second day. The knife was received razor sharp, and now, after fully processing the hogs it is still razor sharp. The knife is well balanced, just heavy enough, and the textured grip is easy on my arthritic old hands. It was equally functional breaking down the hog to primals, neatly boning out shoulders and legs, and then cleanly slicing boneless rib and loin chops as well as large shoulder and sirloin roasts. It delicately removed the 'skin' from the racks of ribs, and effortlessly trimmed the excess fat off the pork bellies. I love it so much I ordered the Santoku, which is as beautiful and functional, plowing through vegetables and meats with ease.

Great knives
Kyoku knives have been outstanding for me. I have found their edge to be extremely sharp and they hold such an edge for a very long time. They are well made and highly attractive as well. They balance well and are easy to use. They tend to be heavy knives, but I have no problem with that. The blade steel quality is top notch! These knives are better than many top shelf brands!

A proper boning knife

Good knife
This is very sharp but must wait to see how long it stays sharp. One thing I don't like is that the handle end of the blade is also very sharp, so you must be careful how you handle the knife. I find it is a little too long. I would prefer it to be about two inches shorter. The most disappointing thing I found is that it is not a Japanese knife. It's made in China. So, no Japanese quality steel or manufacturing.

Maybe my favorite knife....much more quality than I expected
I was surprised that this Chinese made knife (blade of Japanese steel) holds up well to my higher end Japanese Miyabi knives. The Kyoku knife has that Japanese knife look....finished beautifully, the blade is "japanese sharp", the heft and balance is right on, the handle fits my hand well. It is a beautiful knife. Cutting ability....out of the box this knife is very sharp. First test....Deskinning a slab of salmon.....this blade was made for it.

Feels SO nice and balanced
Love that this line of knives isn't as lightweight as Japanese knives tend to be. Price point is phenomenal for the quality, and I use my 5 knives from this line every day at work and they're very versatile. They feel great in my hands, are easy to clean at the end of the day, plus they make my homies jealous. Super functional!

Beautiful Knives from Kyoku
I fell in love with this line of knives and have the whole collection. Outstanding quality and appearance. The fit and finish are incredible and they retain an outstanding sharp edge. The Damascus steel makes them beautiful and they are often a topic of conversation whenever I have a guest chef or someone help me in my kitchen. My only complaint with the company is that they don't have any decent holder, I had to resort to Dalstrong to get a perfect holder for this series. See the picture.

Very sharp
Love this knife, very very sharp. I use for salmon processing. Handle is made of wood, I would like to have it sealed of some way, like an oil based product because after washing (by hand) after it dries the wood has that really dried out feel and limelight colored, not as deep as brand new.
