It’s soft enough to put an edge on and hard enough to keep that edge. Right out of the shipping box it went through a tomato without squishing it.Slices thin steak strips and bashes clam shells apart with ease.These knives are what happens if ameat cleaver and a chef knife get drunk behind the walk in at an Outback Steakhouse.Word of caution...you need to care for this blade. It will start rust spotting in less than a day if you don’t oil and dry it.
