does the kit require the use of the dimmer switch or can i simply plug the power to a outlet connected to a wall switch?

You can plug it into a wall-switch controlled outlet, but it would not turn the lights on, only off. Turning the wall switch on would power the device, but it has a separate on-off and dimmer switch built into the cabling design which is not operable from the wall. Two options if wishing to avoid a two-step power on: 1) you could choose not to use the included switch/dimmer control and then the wall switch would run the lights as intended, but you would loose dimmer function; 2) You could follow option one but also install a dimmer wall switch. However, it is possible the included AC to DC transformer adapter might not like less than 110 VAC when dimming from the wall. It could result in less than perfect light dimming operation compared to the one which came with the lights, or it might cause the adapter to overheat, so I't suggest testing the adapter without wall dimmer to see what normal operational heat from the adapter feels like after five minutes of dimmed operation, then try it with the wall dimmer dimmed to the same level. If there is any difference, continue testing for 10 minutes. Rinse repeat until it stops getting hotter or gets too hot to touch. If too hot to touch, consider it unsafe. If just hotter, you can expect it to shorten the life of the adapter. If it does not get hotter, you have a winner.

2 months in, the dimmable switch does not turn off or dim even as I move the dial up and down. How do I get a replacement?

The same thing happened to me about 4 months into use... I cannot find an adapter and it feels like such a waste for what was an awesome light for my plants.
