For birding, would you recommend 10x50 or 12x50?

For general birding (little birds as well as big birds) 10x50, or even the 8x42. Often when you're birding you're trying to get a bead on a small, active bird with your binoculars, so the field of view (the amount of area you see through your binos) is nearly as important if not just as important as the magnification, and typically the higher you go in magnification, the narrower the field of view. The field of view for the 12x50s is 288', and for the 10x50s it's 346'. I personally use a pair of 8x42s.

These are made in the Philippines.I can say this too,crystal clear from close up to way out there.I think they’re great and they don’t kill your wallet either

Do the 10x42 vipers come with lens caps?

Yes that do. They are joined in the middle and you can attach to your strap otherwise you would loose them
