Where is the dietary information for this product? Isn’t this legally required to sell grocery items?

Yes and dietary information should be on the back side of either the box or the bag that come in it.

What source and type of enzymes in it? Is it really a pig?

No it is a processed cheese similar to Velveeta and the enzyme is paprika and other non animal ingredients.... I use America sliced chez on omelettes only for my Departed Elder Sister loved it inside and atop of her omelette. All clear....
