The answer to your question is yes! The USB C connection is to the Rode interface, the other end of that connection goes to your computer and that can be the more common USB B connector.

Assuming the connector is 3.5mm, you would need a 3.5mm to 1/4” (6.3mm) adapter. The Rode interface will be able to power most easy to drive consumer and professional headphones for monitoring reasonably well.

my headphones are bluetooth via a usb plug in, so can i still plug the headset into my pc and with another port the interface?

If you have separate USB ports for the AI-1 interface and your Bluetooth headphone adapter (2 USB ports), then you should be able to set your computer to output audio to the Bluetooth adapter and use the AI-1 as the microphone input at the same time.
