Has anyone had any problems with the 3/16” steel warping at high temperatures?

My oven goes to 500 degrees (which is a bit cooler than I like - most go to 550). At 500 degrees, it does not warp in the slightest. I honestly don't think it would be a problem at 550.

what's he weigth of the 14x20 3/8"?

If you scroll way down the page, it says 220 pounds. I know my smaller one was plenty hefty but I could still lift it. The company has a Facebook page where you can send questions. There is also a way to call the company in Minnesota. The owner is super helpful and customer friendly. I can’t believe it would weigh 220 pounds. Few people could lift it. I think my 14 x 14 square must have been a good 40 pounds.

When seasoning the steel, is it best to season both sides or just one?

Seasoning does two things. It reduces the tendency of food to stick to the surface, and it reduces the tendency of the steel to corrode. For this reason I seasoned both sides of my pizza steel. Per Cooks Illustrated, I use flax seed oil. BTW, this steel takes very well to being seasoned.
