Lakanto Pancake and Waffle Mix - Sweetened with Monk Fruit Sweetener and Erythritol, Breakfast, Flapjacks, Almond Flour, Low Net Carbs, Gluten Free, Keto Diet Friendly - 16 oz

This low net carb mix is tasty and Gluten Free. The pancakes and waffles are very light and fluffy. I intend to try making some other pastries, like pie crusts, and maybe cookies with it. I have high hopes. The only drawback I can see is that it has almond flour, for those of you with nut allergies, sorry. Like all Low-Net-Carb and GF items, it is a bit pricey. I'm, however bought the smaller package to try it out and recently received my second, larger, 16 oz. package. Even if my experimentation with other pastries doesn't work out, I'll buy it again.

I added maple and vanilla extracts for flavoring and alittle more water than it called for. Very good !

as a low carb product, wasn’t sure what to expect. What a pleasant surprise. The first time I made pancakes I followed instructions exactly. I found it was a little too thick. So next time, I just added more liquid and they were perfect. (they are thicker than regular pancake mix)

I enjoy Lakanto products. This mix though, its not it ya'll need to go back to the lab. The mixture turns out very sticky and the texture seemed waffery/ not like the usual pancakes texture. I had to add extra water to loosen up the mix as it was too sticky. Since am now stuck with the product, next time I'll add a little more vanilla extract and a lil cinnamon powder. Nonetheless, the Lakanto Maple syrup 😋 made it better to eat.
