I’ve been eating 100% whole grain spelt, which also has a low glycemic index (40–55). My bread contains no sugar—just flour, water, butter, salt, powdered milk, and yeast. I wear a glucose monitor to track my blood sugar. I’m not diabetic, but I understand that glucose management is critical for maintaining a healthy weight and controlling cravings. My 100% pure spelt whole grain bread doesn’t cause blood sugar spikes. However, I had to try five different manufacturers to find real spelt that wasn’t being blended with other flours. I made my first loaf with 40% whole grain einkorn and 60% whole grain spelt. It felt like I was eating white bread—immediately I felt lethargic and experienced a sugar spike followed by a crash.
