I make Japanese rice wine with this. No alcohol content. I mix with yogurt or buttermilk. Easy to use. I will try to make miso too. I bought rather large bag for this time. I will keep leftover in fridge.

Have been using Miyako Koji for years to make my own miso paste. No disappointment here.

Good koji but the bag I received was not very fresh, it had oxidized smell. I used it anyway and made salt koji and shoyu koji. Worked good.
