I have purchased other King Arthur products in the past, including other Keto/Low Carb mixes like their Pizza Dough (which is pretty decent, but not the best). I will say that this wheat pancake mix from King Arthur is one of the best I've tried for sure in the low carb/low cal options! Honestly, you could serve this up to anyone as a regular "wheat pancake", and they'd probably agree that it tastes pretty darn good. Blind taste test I doubt you could pick this one as a "keto" or "low carb" version of a pancake. I followed the directions for the regular pancake mix, which was 1 cup mix to 1/2 cup water. I like that they have some alternatives for thicker pancakes (eggs/oil) or waffle mix. When cooking these, it recommends medium heat, I'd go a little lower, as my pancakes cooked super fast. I also used a little butter in the pan to give it an extra kick. When done, the pancakes were a very pleasant slight crisp on the outside, and a fluffy, moist thick interior, much like a regular pancake. I was worried these would be dry or have an off taste, but no issues there - these are excellent. I'd even consider buying this pancake mix as "regular" pancakes, due to the added health benefits of having a low calorie, high fiber wheat pancake, just 80 calories per 1/3 cup of mix. I also trust King Arthur to have quality ingredients from previous items I have purchased from them. This mix just listed 10 basic ingredients (Wheat starch, wheat gluten, 2 low carb sweeteners, oil, egg, egg white, baking powder, flavor and salt). The value for the money is worth it for me, at about $1.5-2 for a plate of pancakes for breakfast while trying to eat healthy... you will be very hard-pressed to find a better value! I'll definitely be ordering this mix again.

If you are gluten free and looking for a protein-packed breakfast option, this King Arthur Gluten-Free Protein Pancake Mix is a fantastic choice. I’ve been gluten free for over 15 years and I really enjoy this mix. The flavor is clean with no weird aftertaste, and it cooks up light and fluffy. As a weightlifter, I love using this as part of my post-workout meal. Sometimes I add extra protein powder and egg whites to boost the macros even more, and it still mixes well without clumping. The pancakes come out consistent every time, and the texture doesn’t feel “gluten free,” which is a huge win. It’s plant-based, non-GMO, and has 11g of protein per serving, making it a great staple for anyone focused on healthy eating. Easy to make, kid-friendly, and versatile—you can use it for pancakes or waffles. Highly recommend for gluten-free athletes or anyone wanting a better-for-you pancake mix.
