Do you have to refrigerate after opening?

Yes, you should. It will last a lot longer. Leaving it outside after opening can grow mold easily.

Mine has been in the fridge for several months. The basic ingredients are are slow to devolve. But, that's my health choice.

It’s pretty hot, but very flavorful. For people who are used to very spicy food it’s probably just right. I once went to Thailand and ordered green papaya salad and had to keep drinking Coka Cola because it was so spicy. Based on that standard then this paste is on the mild side. So it’s relative.
