Review: I love rice and have it daily as part of a ... - I love rice and have it daily as part of a balanced diet. Unfortunately as I've gotten older I haven't been able to enjoy carbs as freely as I once did. I've tried substitutions like cauliflower rice, quinoa and the other Konjac rice products (the ones packed in liquid). None of them have been very satisfying in terms of taste and texture which is a big factor for me. Cauliflower rice gives everything a cauliflower like taste no matter what you pair it with and the wet Konjac rice has a weird slippery texture and takes awhile to dry pan frying it for regular use (sometimes gives off an odd smell too). I guess it really boils down to texture, if I'm going to eat rice I'd prefer a close rice like mouth feel as possible. With this dry Mannanhikari rice it was a total game changer- I can still eat rice but not all the calories! At first I was skeptical, I was worried the rice wouldn't 'cook' like regular rice. I was pleasantly surprised when I tried it, it didn't have any weird taste or texture. In fact, it was so well incorporated into the regular rice I had a hard time telling the grains apart. I even served it to my picky husband, didn't tell him it had diet rice in it and he couldn't even tell the difference either! All the instructions are in Japanese but I was able to find a source online that translated it. I rinsed one cup of Jasmine rice and then added one packet of Mannanhikari rice unrinsed and added 1.5 cups of water. It came out perfectly! The serving size after cooking was a little over 4 cups of cooked rice. I served it with a Japanese curry and it was amazing! I wish it wasn't so expensive, but at least I know I have better options now.

Especially when you add mixed grain rice for extra nutrition which gives so much flavor to the mix. This rice takes the guilt out of eating rice for me and the texture and taste is identical to any other rice you're eating. If you want it more firm then add less water but the flavor is super delicious.

**Q: How many net carbs are in this?**
A: 1 go (Japanese rice measuring cup) is about 3/4 C US.  Normal carb for this is 37.1 g.  Their site says 1 go plus 75 g of mannan hikari is 27.6 g carb for total 150 g and that is why they say 33% calorie off.  I've tried this ratio and the rice comes out perfectly fluffy.  Mannanhikari is konjac ie what shirataki noodle and konnyaku is made from - konjac.  Some one thought no way to keep konjac dry and that is not so.  I purchase dried bundles of shirataki noodle from Japan to keep in the US.  Just boil in water and they become regular shirataki.  Because I don't see the exact carb amount of this (they are more concerned with kcal), you have to to do your own calculation for carb.  But if you can do 50% rice and 50% mananhikari, the carb should be lower than 20 g for 1 go rice.

**Q: how to cook?**
A: You can follow risotto recipe Italian style.
I cooked it with mushrooms, asparagus, different vegetable.
Recipe with mushrooms (there is a my picture):
1. to wash the rice
2. to cook the sauce mixing in a frying pan mushrooms, one piece of leef, green peas, olive oil, salt and after a while vegetale water
3. when the sauce is cooked, to add rice and if it needs some other vegetale water. Cook for 10/15 minutes
4. a sprinkling of pepper and parsley before serving.

A: I prepare it just like regular rice.  I pour the little packet into my strainer, rinse it, then either mix it with an equal quantity of rice, or cook it alone.  I also use a measuring cup beforehand because I can never remember how much is in each packet - I want to say 1/3 cup, but again, measure it, then, use the correct amount of water (same ratio as rice.)

The taste is awesome ... just like rice. Was happy about that!!! But I thought all the while since its SHIRATAKI it was low carb or zero carb like the wet ones I've tried. I am on a Keto diet hoping to get out of insulin. After having this rice, I was wondering why my blood sugar was up when I've gotten it consistently below 130 for the last 2 weeks. So i searched to see what the nutritional fact is on this and just found an answer from the seller right here about Nutritional Info. It has 44.4 g carb !!! Not sure what the serving portion was cause it didn't say .... but that is a LOT!!! I felt like I just ate reg rice. :-( and i thought i found a good low carb alternative....
