Q: Can you use this to store things like single servings of a casserole type dish (perhaps tuna casserole or macaroni and cheese)?

If your not going to leave it in the casserole dishes then, yes... But be careful thought because it will suck the juices up through the bag and it won't seal ....If you want to do cooked foods I suggest buying one that made for that with the vacuum tube attachment and containers.....I really just use mine to pack and freeze meat ....Works great for keeping lettuce fresh also and fresh raw asparagus ...Hope this helps ! Q: Does Nesco require that Nesco bags are used for satisfactory results?

There is nothing in the printed materials about using just the Nesco bags. But as you know all bags are not created equal.

Q: Is the only difference between this and the 02 the size and the lack of bag storage? Is it as powerful? Are you satisfied with its use? Thank you.

The 01 is white and the 02 is black/silver. They are both 110 watts. The 02 comes with a few more bags and the storage/cutter.

Q: For the VS-01 without the extended seal, can you just press the seal button again to manually extended seal?

Never had to do that but thinking of the process you would need to let the first cycle complete and strongly suggest that the cool down time be followed then pressing the seal button would do a new sealing cycle.
