Foundational cookbook
I was looking for a comprehensive cookbook that would teach me how to cook, not just give me haphazard recipes. This book really did the job. It works progressively from the most fundamental (different vegetables and meats and their preparations) to basic ways to prepare those ingredients, and finally worksheets to employ the techniques you've learnt. It was exactly what I was looking for. The few techniques I've learned so far have helped me make restaurant-level food. Many of the preparations need time and special ingredients, but you can find alternatives (e.g. buying stock, or making some and freezing it later). They also have QR codes to their online school where you can see some of the foods being prepared. You won't regret getting this if you're serious about learning to cook!

Especially essential for those who havenโt gone to culinary school
I am a chef de Partie with zero training or school background, and have learned everything through teaching myself after 8 years in the trade I decided to buy this book to help level up my love and respect for my passion and it did just that. I havenโt read all of it as Iโm very busy but when I need inspiration or I need a lesson or I need to teach the commis on something I donโt have any prior knowledge on I flip to the parts I need. I learned a lot about foods Iโve never experienced cooking with, as I do traditional Scottish cuisine but I have used the methods of preparation in my every day work life and use this food to match food ideas I have including combinations for menus and specials.

Ultimate French culinary book
I'm a culinary arts student and an aspiring chef and this book is like a Bible to me. It is full of useful information, tips and beautiful pictures. I have many other gastronomy related books but I keep using this one for both work and college every single day. If you're looking for THE culinary book than look no further than this one, it will last you for very long time and you will keep coming back to it.

A real gem of a book. Fantastic!
Bought for me as a gift and I love it.I'm not a chef or chef in training, just a mere enthusiast.This book has everything I could ever want to know.Clear detailed steps, explaining techniques and skill development.Just nice to sit and read up on things, although beware the book is huge and weighs a tonne.Yes it isn't cheap, but it is all you'll ever want :-)
