Does this watch come with a nato, regardless of model purchased? do you get to choose the nato if so?

What type of stainless steel is used?

Mine hasn't arrived yet but the answer is almost certainly 316L. Rolex's last claim to fame is that they use 904L, which resists scratching and acids better, but 316L is almost universal in watch making because it is not too expensive but hard enough to machine a watch case from. Cheaper stainless like 18-8 just won't make a machined watch case, it's too soft (and "gummy" from a metal working perspective).
