We use only barn eggs and a special blend of 00 and Durum Wheat flour so that the pasta holds the cooking very well. This filling is made with a combination of premium beef and truffle. We use fresh chuck tender beef which we slowly cook with red wine and vegetables and tasty Summer Black Truffles from the Umbria region in Italy.
