Great Pancakes!
Mixed it almond flour for tasty low carbohydrate pancakes. Recipe: 1 cup almond flour, 1 cup spent grain flour, 1 tablespoon baking powder, 2 eggs, about 2 cups almond and/or coconut milk. Mix all ingredients. Fry in nonstick pan with minimal butter or oil.

Extra taste and texture for rustic baking
I use this spent grain flour in my beer bread and rustic scones. Imparts a pleasant whole food flavor when used sparingly with other high quality organic wheat and bread flours. I find a 1/8th to portion ratio adds the flavor and texture I want without density.
