Can the pocket label be easily removed, so they can be custom embrodiered?

I have a large number of Carhartt pocket T's, Henleys and this shirt. I generally remove the Carhartt label from them. You can pretty easily do it with a seam ripper and a good light (to see the threads). You might "pull" some threads if you are not careful, so take your time. Of almost 15 shirts I have done this to I have only pulled one thread. It takes about 5 minutes if you take your time.

If I wear a large in all of my other polos, do I need to order a medium or large?

They are cut on the large size. I'm 5'10" and 170 lbs. About 3/4 of my shirts are large. The Carhartt medium fit me perfectly. Not tight at all.

Where are these shirts made? I saw that in 2014 they were made in Vietnam but a lot can change in the garment industry in 6 years.

I bought one of these in black some time ago and I just got it out to use it. the vinyl like label is stuck on the outside what do I do?

well, must have been a while. try running warm to hot water over the label. That should loosen the glue that holds it on.
