The consistency is more for cake or muffins because of its stickiness. Because of this, Its harder to handle in the baking process than wheat flour but it comes out great still (at least in my experience). I appreciate the gluten free labeling which can be hard to find on buckwheat sometimes, and feel it's reasonably priced for the amount and quality. I made some single serving sized pumpkin breads for a party and no one once thought they were gluten free. I had fun not telling them until after they raved about how good they were. It requires no added salt to taste delicious and that was important to me. Then i served it with pure maple syrup.
