This TAJ Ragi flour came sealed and fresh. My wife used it to make dosas which came out well and tasted pretty good.

Great mix in flour for baking
I made my standard baguette recipe subbing in 1.5 cups of this millet flour for all purpose flour in a 4 cup total recipe. I would have used a bit less, but I ran out of AP flour:(. This made a noticeably dark loaf with a very crisp crust. At the last minute, I added a handful of sunflower seeds to the dough to make it extra rustic. We ate this with an African style peanut stew and it was perfect. The loaf was a bit more crumbly than usual, which I attribute to the millet flour, so I would dial back to maybe 25% of the total flour next time. But otherwise, fun to try this and I'll be adding it to other recipes moving forward and also try some Indian recipes with this like dosas.

Good For Ragi Roti
This flour arrived well sealed and fresh. The flour is very finely ground and fluffy, which is important for it to work in many Indian recipes. I made ragi roti as a side with our curry and while they didn't puff out as much as I would have liked, they still tasted very good and the dough was easy to work with.

Excellent flour! Has the heartiness of whole wheat, but a light texture!
This was my first time trying millet flour. I used it in blueberry muffins, using 1 cup of TAJ Ragi Finger Millet Flour alongside 1 cup of all-purpose flour in a favorite family recipe. The whole family agreed that the muffins were better than normal. They had an excellent flavor, a soft, fluffy texture, and yet felt heartier than with only all-purpose flour. Next time I make this recipe I may even try it with only the millet flour to see if that improves the recipe even more. Either way I love this flour and am glad I tried it! The only thing that could make this better is if the bag resealed for easier storage.

Makes Good Ragi Balls
My partner has spent a good deal of time in India and was missing Ragi balls, so we were pleased to select this Ragi flour to give them a try on our own. We found the flour to be finely ground and easy to mix without the dreaded lumps, and the resulting balls were a success! This is a nice large bag that will last us for a bit.

My ragi flour was exactly as expected. It was consistent, well-sealed, and fresh. It's a nice change and offers lots of protein, fiber, and minerals. I'm looking forward to making some ragi cookies and biscuits!

Good quality ragi flour; disclaimer states it may have gluten, soy and peanuts traces
This flour provides a lot of nutrition benefits compared to regular wheat flour: high protein and mineral contents, lower glucose. This flour could be gluten-free, but the disclaimer on the bag states it was processed on equipment that may also handle regular wheat flour, soy, peanuts and such – nixing big differentiators for this type of flour. There is no production date nor expiration / best by date printed anywhere on the bag, so better plan to use it quickly, not sure of the shelf life.

Quality alternate to flour. Note the benefits and cautions.
I’ve been experimenting with a lot of flour alternates in the past few years and this is a good one. I am able to use this in both breads and cookies (as partial replacements – I’ve not made anything 100% with this). There are a lot of benefits to Ragi flour, but if you have thyroid or kidney stone issues, you should research first. I will happily use it in moderation.
