You could use whatever broth you want, from basic chicken or beef, to tonkatsu, miso, tom yum, tom kha, pho, etc. I love rice vermicelli, too, but mung bean glass noodles are a bit lighter (not just in color), and showier. With the cost these days of groceries, I like keeping a bunch of shelf stable items in the pantry, and for those of us who prefer lighter Asian food to heavy Italian pasta, this is a good choice to keep on hand. Buy them all the time!
Great noodles!! Cook very nicely and the texture is amazing. Kind of like Al dente noodles. Very easy to make! Then add whatever you want to them!

My go to noodle.
These are my go to noodles for my Chow Mein Fun , and egg rolls. The price is great, and always ships fast. Don't over soak the noodles in hot water or they will get to soft and won't stand up to the final stir fry. Just place in a bowl, cover with boiling water for 5 to 6 mins, drain and spread out on a rack or paper towels until ready to use ! Really recommend these noodles !!

I love these bean thread noodles--low carb and delicious!
I looked up the instructions and followed them by 1. soaking in cold water for 10-15 minutes, then rinse, soak in boiling water for 10 minutes, rinse again then they are ready to use. They are delicious with stir fry or like in the photo, in chicken soup with mushrooms, carrots and mung bean garnish. I did not know these are made of mung beans and did not know until I researched it long after using them. They taste so good and so much like real noodles. Someone here said to boil them or you'll get stomach cramps after but I found that soaking, rinsing then soaking in boiling water seemed to do the trick.

Price is too high
The price I paid is more than double of what I paid at a local asian store. After I ordered with Amazon, I went to a local asian store and found the same product for less than half the price. The product is good, but priced very high.

Great Packaging, Fun Noodle
This is a fun noodle to use in recipes, whether Asian salads or just any American dish that has sauce. They are packaged in bundles which make them easy to grab in serving sizes.
