This is a lovely oil and I love nothing better than to use it as part of salad dressings. It's got that amazing deep nutty flavour that is so lush, but some people might not like the taste-it is pretty strong, so maybe use a small amount, maybe a teaspoon, mixed with a tablespoon of extra virgin olive oil? I usually add a tablespoon of this, and a tablespoon of extra virgin Greek olive oil, apple cider vinegar (plus other dry seasonings) for salad dressings, and it is so good and delicious. In fact since I've been introduced to pumpkin seed oil, I use it in every salad dressing I make at home-I don't care for ever omitting it, it's just too delicious to leave out! But I have to talk about the price-yes I know, good quality costs more, but there are cheaper versions out there that taste very similar to this, but this oil tastes much better, has a stronger flavour.
