I'll be honest - I was intimidated at first by these recipes. It certainly isn't "3 ingredient meals"! I marked a number of the recipes to try, but then put the book down. Finally I decided to just pick one and try it - picked Southwestern Chicken Taco Stew. That was mostly a success except I accidentally put in half of the chili powder recipe called for. Still we enjoyed it (hubby did add some hot sauce though, LOL) Then I tried another one. And retried the Chicken Taco Stew with the correct amount of chili powder. I'm glad I got started. We have had some great dinners with these recipes. I've even gotten my "I hate chicken" hubby to get excited about chicken dishes - I truly never thought that would ever happen! What I'm probably enjoying most though is that I don't have to interrogate each recipe for carb items and try to figure out how high in carbs it is, or how I can modify, etc. With these recipes I can safely follow them and know we are eating low carb. Here are some of our favs from the book: - Southwestern Chicken Taco Stew (made this several times now!) - Cheesy Ground Turkey "One Skillet" Helper -- made this with both ground turkey and beef, and it was delicious both ways.
