It works without changing taste
This really works great. My wife loves the Mexican cheese dip that you find in restaurants. With this product you can use 1/2 cup water heated, 1/2 teaspoon of this white powder/sodium citrate -8oz of your favorite cheese-heat it up and stir. Most cheeses do poorly when melted. They separate like cheddar into a mess. Anyone can melt American cheese but it is nasty and a fake cheese. Using this product you can melt any good cheese into a very liquid dip type cheese that will pour. It keeps the cheese all together and thin it with water to taste. This is how the restaurants do it.

I am just amazed at how creamy this makes cheese. I made au gratin potatoes for a large family gathering and several people asked for the recipe. I had to laugh because it was the family recipe just way creamier since I used this product.

Cheese sauce secret ingredient!!!
I’m a chef and owner of a food truck, I make a cheese sauce from mozzarella with sodium citrate. My cheese sauce is the foundation of my menu! I’ve tried other brands, as well as boiling citric acid with sodium bicarbonate, judee’s is by far the best product available!If you need to emulsify cheese, or make any type of cheese sauce you should try this... no need to use eggs for Alfredo.. no need to thicken with flour or rue.. stop suspending your cheese sauce, and start emulsifying it!!!Every recipe comes out with a “velveeta” type texture!!!

Great for the one who needs extra sodium.
Cardiologist told me to consume 7 grams of salt/day. Low blood pressure. But that's nearly impossible. So, noticing that Sodium Citrate is the "Sodium" added to many products I decided to add this to my Propel to bump up my Sodium. I use 1/2 tsp for 1 gallon of Propel water. More than that alters the flavor of the water. So, if you need extra Sodium and can't stand Salt, try this. (Salt is only 1/2 Sodium, 1/2 Chloride)
