Massive points for this! On to the tea itself - its lovely. I pour about 2cm or 3cm of cold water in the bottom of my mug before pouring boiling water from the kettle in. This allows to the tea to brew in hot but not boiling water which stops that acidic/ bitter taste that green tea can have if brewed at too high a temperature.
