We have also added lamb bones from a leftover dinner to the beef bones and it was great. Ham hocks would be good also. Once the bones are done browning, I turn off the sauté and I add 2 quartered onions, 6 inches of peeled fresh ginger, 8 cloves of garlic, a tbsp of brown sugar, 1/4 cup fish sauce and a few tbsp of soy sauce then add as much store bought beef stock as I can to the max fill line of the InstaPot which is anywhere between 8-10 cups. I add the spices, close the InstaPot and cook on high pressure for 30 minutes then let the pressure release naturally. Once done, I let it cool down enough to safely handle then strain the liquid through a mesh strainer into a big bowl, cover the full bowl with plastic wrap and stick in the frig overnight to let the fat solidify. The next day I can very easily take off the fat then I am ready to portion into freezer zip lock bags, label and freeze.
