But now I need it gluten free and got the cake mix and an angel food cake pan (you really need one of these, people). And yes, angel food cakes take 10 to 12 egg whites, gluten free perhaps more because gf baking requires a bit more liquid. Anyhow. I make the cake and it lofted high and turned out beautifully and had that perfect cottony texture. Wasn't gritty wasn't too sweet could not have been any more perfect. I made a trifle with it and it held up just fine to the wet ingredients tho it was also wonderful on its own. I definitely plan to make it again (I bought two boxes in case I flubbed the first one) and serve it the traditional angel food cake way with strawberries and whipped cream.
