Then I found a recipe online written by a Korean who stressed that using Korean red pepper was essential. He was right!! My third try with kimchi using this particular pepper worked. The hotness of chili peppers drowns out all flavor in kimchi. This pepper is much, much milder, with just the right amount of warmth...and flavor.
