Far less liver damaging coumarin in this Ceylon cinnamon, compared to cassia (store) cinnamon. Smooth, sweet and mellow!
I recently read that European bakeries are being restricted in their cinnamon use because they are using the more toxic cassia. They can now only use 15 MG per every KG of dough, and more, only in holiday pastries. According to reports, the maximum daily safe level of coumarin is about 0.07-0.1MG per KG of body weight. (1KG equals 2.2 lbs). Where a portion/serving size of cassia contains 0.5 MG, the equal amount of Ceylon contains only 0.04 MG of the toxic substance. Enough science... This Ceylon cinnamon smells and tastes wonderful! It is a bit sweeter and more aromatic than the cassia, which has a stronger and harsher aroma. The Ceylon is more smooth tasting and smelling. The health benefits are numerous from lowering blood pressure, cholesterol, and blood sugar. In addition, cinnamon has a respectable amount of calcium, lutein, and fiber. This brand is organic, Fair Trade, and very high quality. To test the two types of cinnamon side by side, I prepared my favorite chocolate cinnamon nuts with this Ceylon and my old cassia cinnamon. (beaten egg white with cinnamon, unsweetened cocoa, vanilla and stevia, mixed with 3 cups of almonds and walnuts, then baked at 250 degrees for an hour). Major difference! The cassia flavored nuts tasted very harsh and bitter compared to the sweeter, softer tasting Ceylon. Without this side by side comparison, I wouldn't have known! I poured the cinnamon into a lock n lock container and I'm keeping it In the freezer. Do your own test with your favorite recipe and you will see the difference! Frontier organic Ceylon cinnamon is well worth the extra cost, as are all organic products, in my opinion. Don't forget to make Chai Tea with this and a bit of cloves and chocolate. It's mellow, smooth, and sweet, and so much better tasting than with the cassia. I will definitely purchase again.

ceylon is mild, sweet, different than typical cinnamon (cassia)
I like Frontier bulk organic products. I have been using them for years. I know the prices fluctuate on here, but I managed to get it a really good price. So, great price, quality, and quantity. I use a mix of ceylon and cassia cinnamon. The later is what is typically used in baking and what you get when you go to the store and pick up some cinnamon. I like adding the ceylon into my diet for the different taste and for some of the health benefits that are different from the Cassia variety. A little bit lasts a long time, and since this is a 1lb package, I found it best to portion some out and store the rest in the fridge. Good stuff, I will buy again (eventually)

I love this cinnamon!
I've been hearing about the health benefits of true ceylon cinnamon and wanted to begin using it in food and teas. I couldn't find it locally, so I ordered online. Delivery took 1.5 to 2 weeks, but I was not disappointed. It arrived in a foil pouch, as shown on the photo. I transferred some to a small spice shaker bottle, and stored the remainder in the foil pouch, enclosed in a ziploc bag. First, I tried pouring it into the spice bottle from the foil pouch, but spilled quite a bit on the counter. If you plan to transfer to small containers, I suggest spooning/scooping it out into the container of your choice. I also immediately made a 16oz cup of cinnamon tea, with one teaspoon cinnamon. I love this cinnamon! It smells and tastes wonderful. The flavor is milder than "regular" cinnamon, which to me, is a good thing. The texture looks and feels like powder, so it mixes very well. I can't wait to try this in other recipes. Some have commented on the price of this cinnamon, but when I compare to what I've been paying for organic tea, the tea I make with this cinnamon is half the cost of the organic tea I've been buying in bulk. ...and this tea smells much better. I definitely plan to purchase this cinnamon again. Update: 7Feb2012 I now add this cinnamon to my coffee, hot chocolate, and protein shakes.. and love the added flavor! My favorite way to drink this as tea is about 1 teaspoon (or less) of cinnamon, 16 oz of hot water, and lemon juice. This makes a healthy, delicious tea. Cinnamon has also been shown to reduce glucose levels, triglycerides, and cholesterol. The smell of cinnamon supposedly also improves cognitive ability.. so I keep it around while my kids study. I can't tell whether it's working, but they are happier and more alert while studying.

What does True Cinnamon really taste like?
I have always heard rumors about "the other cinnamon", but never knew what I was missing. Finally, I emptied my old Costco tub of "Saigon Cinnamon" (really Cassia Cinnamon) and looked here at Amazon for a refill. I've used the Frontier spices before and had great experiences, so I trust them. This version is a powder, about as fine as powdered sugar, so it is not as coarse as the ground cinnamon you may be used to. The taste is definitely different. We are all used to the sharp taste of common Cassia Cinnamon, similar to what we get in Cinnamon candy. True Ceylon Cinnamon has a MUCH softer/milder taste that reminds me very much of tropical flowers. It is still recognizable as cinnamon, but most of the sharp, biting, bitter, burning flavor is gone. To me, the flavor is fantastic, but less powerful. I now DOUBLE the amount of cinnamon in my recipes, when using the Ceylon Cinnamon. This works pretty well, bringing the flavor up to what I'm used to, with a better - more floral - flavor. Interestingly, while reading the reviews here, I was clued in to the fact that the cheaper Cassia Cinnamon contains coumarin, which isn't good for you in high doses. (For example if you take Cinnamon for medicinal purposes.) Coumarin isn't a big concern for people only using cinnamon as a spice. You can Google "coumarin" yourself to find out more. Will I buy this again? - YES! ... But I'll probably buy the ground version, rather than the powder version.

Fragrant and lovely (and from Sri Lanka)
Very nice: all the qualities I look for in a Ceylon cinnamon. I'm not nearly as fond of cassia, so I appreciate the subtle, sweet, almost flowery qualities of this stuff. Once again I'm really disappointed with the Amazon site's listing of product origin. The description says it's from the US, but if you look at the Q&A (or Frontier's Web site) you'll find it's grown in Sri Lanka (appropriately enough). I don't have a problem with the actual origin, in this case. What I mind is finding inaccurate information in the product description so frequently that I now automatically check other sources to find out where the product is really from. This is not acceptable, especially with regard to food products and medications.

The REAL cinnamon! Better flavor, better quality, and wonderful health properties.
If I am going to consume a product, I want it to be the best quality, and as least processed as possible to reap all the benefits. The difference between Ceylon Cinnamon and the conventional "Cassia" cinnamon that you see at every store is it's properties. It actually has them! Ceylon cinnamon has been hailed as the "true cinnamon" or the "real cinnamon" that possesses outstanding health benefits especially for the diabetics and those challenged by obesity and high cholesterol issues. Since there is no way to tell if the cinnamon powder that you see at Wal-mart, Weiss, or wherever you shop, has been made from the Ceylon cinnamon versus the Cassia cinnamon, and most bottles of cinnamon we buy do not indicate the type of cinnamon tree the cinnamon is sourced from, I buy my Ceylon Cinnamon right here from amazon. It's Organic and verified authentic. This is not brand new information and yet is worthy of repeating- *Buying in bulk will save you money.* I go through a lot of Ceylon Cinnamon and it makes sense to buy in one pound bags, and most importantly, from a trusted source.

Real Cinnamon is Divine
Apparently I have never smelled REAL cinnamon. If you're looking to make all of your cinnamon dreams come true, this is your moment! I had recently been hearing about all of the benefits of cinnamon & soon after saw this huge bag of cinnamon on the kitchen counter at a friends house. I tried it & was hooked- ordered the bag on Amazon when I got home. Ceylon Cinnamon is beyond delicious- smells like Winter Holidays and happiness. The health benefits can include help with: arthritis, MS, Diabetes, carb cravings, etc. I use it to help maintain a healthy blood levels and prevent cardiovascular problems. It's easy to incorporate this into your diet- I use it in tea with lemon & honey, on top of my yogurt, add it in smoothies, sprinkle it over sweet squash dishes and of course, in baked goods, although I prefer using it without adding heat (i.e., in baked goods). I keep it on the counter in a jar for easy access & now my daughter uses it on everything.
