what size would be best for adult beginner with small hands?

Subjective but soprano is the 'original' ukulele size and concert is the 'new standard'. Playability on a ukulele depends on the nut width, neck shape and string width more than anything else. Most ukuleles in soprano range are 33-35mm nut width, 26-28mm string width G to A, and have rounder profiles. Those will suit smaller hands. But remember, most concerts are the same measurements except you gain more neck length and larger body - overall length is 23" Vs 21" so both can and do suit small and larger hands. Soprano will be a brighter instrument - more traditional. Concert will have more comfort at the body to hold whilst standing.

To answer this will not be possible unless you message the factory/manufacturers as you would need some certification such as FSC to consider if the wood was sustainable sourced. To be fair, there are very very few suppliers of ukulele who can or do provide this. Perhaps a better way to answer is to say that CITES protects key resources and as such this meets those requirements. Mahogany is not endangered as a species, and whilst the source of this is unknown, the species is in abundance worldwide. It really will depend on your requirement for how sustainable you want it to be. Bamboo, for example, is hugely sustainable even without certification by virtue of its spread and abundance and with its limited use in production of Ukuleles, it's 'over use' is far less an issue.
