Great Keto option - Checked my numbers!
I was exited to find these, as I have been back on keto since early April, but cautiously optimistic. I have tried many alternatives (Shirataki noodles were the worst texture for me, felt like I was chewing on what I assumed octopus legs would be like..really unappealing), so I was willing to compromise for something mushy over octopus texture, based on other reviews. I will admit, the texture was a bit mushy, but I struggled with trying not to make them too al dente, so I may have cooked them too long, but they were still edible and pretty good in my dish! I am going to experiment with maybe cooking them to al dente then giving them an ice bath hoping they absorb more water without the heat making them mushy as II am dying for a pasta salad! I did have a positive experience with my ketones and glucose numbers having tracked both before and after I ate the pasta with dinner. Although admittedly, it wasn’t a clean test as I had asparagus with butter and oil about an hour before testing. My starting numbers were 1.7 ketones and 90 glucose (blood testing for both), and about 3 hrs later (meant to do two but forgot) it was 1.6 ketones and 95 glucose. Meal was chicken in a sun-dried tomato cheese sauce so there were other things that contributed to the number changes. But even taking that into account, I was pleasantly surprised! I agree, the cost is definitely high, maybe because it is still trying to develop a following to reduce manufacturing cost, don’t know, but I will keep buying and hope the price eventually comes down. Hope this helps others and if anyone finds a way to cook these to the perfect pasta salad texture, please share!!!

with a cheese or other sauce, this tastes like regular pasta to me - I give it an 'A'!
It cooks fast. Tastes slightly different but not bad at all when eating it by itself (I just took a taste to compare to regular pasta by itself taste and texture). Texture is not bad, kind of similar to regular pasta. I made this and added Cheese Sauce and then also added some chillies and tomatoes to cheese sauce to test it all. I am impressed with the product and it exceeded my expectations. Keto Dad was cooking it online and I thought I would give it a try. It is very pricey so I cannot eat this often but it sure was a great substitute for the regular pasta. I would recommend it - I have tried another kind with cassava or something (different brand) and it was awful. THIS IS A GREAT PRODUCT if you are adding sauce or putting something over it that has some sauce or flavor. If eating it alone, maybe not most people's choice. I definitely would not assume that it is OK for a diabetic or prediabetic person - if you are one of these people, please check before and after blood sugars because everyone is different and one must not assume it is OK (for this or any other Keto or low-carb product). I give this 5 stars on everything Except the price. I give it 2 1/2 stars for the price. It ain't cheap,esp for family.

Severe digestive problems
I was looking for a keto-friendly pasta to use with my longstanding Bolognese sauce recipe. I found the Aviate Lupini Noodles here on Amazon and thought I'd give them a try. The first time I used them was when I had two family members visiting, so there were four of us four dinner. We all agreed the taste was barely acceptable, but the texture was awful—just mush, honestly. I thought that perhaps I had made a mistake in cooking time and thought I'd try again later that week. I woke up in the middle of the night with digestive issues, and they didn't resolve until midday the next day. I was in the bathroom at least four times, maybe more. It turned out that the same thing had happened to everyone at the dinner table—we all had terrible nights. It wasn't the sauce (that was fine) and that was all we had for dinner that evening. So it was the pasta. If it were just me, I'd say it was me. But four adults of differing ages—from early 30s to 60, men and women—all had the same experience. So I'll never touch this pasta or anything like it again.

Pretty close to the real thing
I lived on pasta but switching to more of a Keto diet, it's tough to go without it. I've tried a lot of replacements and this comes closest to the real thing. I tend to over cook pasta (on purpose) and do the same thing with this. Works well as a side dish. Instead of my old meal of a plate of pasta and a meatball, I can use this to have a plate of meatballs with a spoonful of pasta. Satisfies the crave. I'd say give it a try but not as a main course. Also used this to make a pretty good mac and cheese.

Impossibly Good Macros, tastes great, but gas!
I have never had a product become such an instant staple in my diet. The nutrition on these is basically protein and fiber which is the bomb for low fat and low carb diets. I've made low fat, low carb macaroni and cheese, ground beef spaghetti, chicken noodle soup, and sesame peanut pasta. Every dish has been the kind of meal makes you feel warm, full, and well taken care of. No other pasta has been truly keto like this, so it's just such an absolute thrill! I only cook them for 4 minutes, then strain. I actually love the shorter cook time. Usually adding the pasta will be the last step of making any dish since it is prone to falling apart. I try to avoid a ton of stirring after straining them. I either top the noodles (spaghetti), toss the noodles (sesame peanut pasta), or add the noodles and then slip in around the sides gently lifting and dropping the mixture to get them integrated (mac n cheese, chicken noodle soup). My first time making chicken noodle soup I let it simmer for a long time with the noodles in and they broke apart some, but man it still tasted so good! The noodles have a slightly different, grainier texture than wheat noodles. For me this is just simply not an issue. I won't be eating pasta if it's not this, so I'm happy to have the slight texture variation. Honestly, I don't think about it much once I dig into a dish though. I just enjoy the flavors and texture of having delicious noodles again! Edit: After eating this product regularly for a month we have unfortunately realized that it’s giving us so much gas we can’t keep eating it. It has gotten to the point that I have to make sure I don’t have any place to be for the next couple of days after we eat it. It makes me sad because we enjoy eating it so much, but we must part ways. If they ever find some way of processing the bean or adding digestive enzymes to cut down on gas I hope I hear about it!

Great substitute, love the flavor, and it doesn't cause digestive issues
I usually have a lot of digestive issues with beans or legumes. Since going Keto I can say that has resolved since..I got rid of the beans and legumes (not to mention grains - all of these things gave me gas and bloating and misery!). I don't like pasta sauce in general- so I just cooked up some ground chicken with onions and garlic and mixed with some olive oil and this pasta and it made an amazing dinner. Added a bunch of veggies steamed. Overall since this has so much protein I just have to watch how much animal protein I add - the nice thing is at this level I don't need to add much or I can skip it and just do a veggie pasta salad. Yum! I just cook to my liking (more al dente, less mushy) and they keep fine in the fridge. On their own - no sauce. Easy to reheat and do just as well in a tuna pasta salad too. Love these and already bought 6 more bags!

Good low carb substitute
It's not fooling anyone because it doesn't taste like pasta but it's still a good alternative. Nothing that a little sauce or seasonings can't fix.

The best keto friendly pasta
Tried several meals with this and both myself and my wife love it. Discovered it on Serious Keto. Anyone on low carb knows the holy grail is to come up with acceptable substitutes for our favorite carby foods. Bread, Candy bars, Pizza, French Fries, you name it. Pasta is a biggy as it’s such a quick and versatile ingredient. To this point I have to say this pasta is the best keto substitute of any food I’ve tried. The trick is, not to cook it long. It can go mushy with sustained heating. I find four minutes simmering gives it a wonderful bite much like fresh pasta which I used to like and much better than dried pasta. I would honestly take this over dried pasta now. If we make a pasta bake we cook the rest traditionally then just add this just before we eat and mix it in. It is so good. I have their rice on order, if it’s as good I will be over the moon.

Excellent for Keto dieters
This is an excellent low carb option for those who follow the keto diet or thise who want to enjoy a low carb pasta option. This pasta does not taste like pasta made from regular flour, however it does have the same consistency when cooked. I like the flavour. But you do need to salt the water and cook for about 4/5 mins on the boil. I saw a few reviews where it had gone mushy for some, however I have found it holds its shape for me even in soup. In my opinion this product is an excellent option for those who want low carb pasta!

In a word…. Disgusting
Was looking forward to trying this healthy alternative to pasta. Tried one bag and the others went to the trash. These have no taste and are a thick gummy texture. We choked it down for one meal but this is not something we could ever get used to eating. There are so many edible options available for example edamame spaghetti which has both an appetizing texture and tastes great.

Good! Don’t overcook.
Good flavour. Needs very very little cooking. A little bit like gluten free pasta in texture but with all the fibre and healthy nutrition facts it’s a great pasta.

It's a difference from wheat pasta
There was a bit of getting accustomed to this over wheat flour pasta. Now i love having it when the family wants pasta night without worrying of it spiking my blood sugars off the charts.

The texture is hard to get past
I will likely eat what I ordered, but the texture is really hard to get past so I wont be ordering again. If you aren't sensitive to textures, you might be fine... I thought I was ok with weird textures- but these proved that wrong. The flavor isn't bad though, fairly neutral. If you are looking for a low carb pasta alternative, and can handle slightly doughy mushy textures you will be fine.
