When the old Thracians rode on their horses every day, they produced one of their main foods - yogurt. The riders wore a lambskin bag with milk on the belt. Thanks to the microflora in the fur bag, favored by the body temperature of the spirited Thracian men, the sheep milk "jog urt" was created. "jog" means "cut resistant" and "urt" means "milk". Bulgarians are not only proud of the discovery of yogurt, but also of the fact that they make the healthiest yogurt in Europe, thanks to a specific bacteria, "Lactobacillus bulgaricus", which causes milk fermentation. The bacteria was isolated in 1905 by Bulgarian scientist Dr. Stamen Grigorov. Grigorov identified two other bacteria - a Streptobacillus and a harmful Streptococcus thermophilus, which together with the Lactobacillus, as it was found, form a perfect symbiosis. He also discovered that these two bacteria are not part of the intestinal flora of the human organism, but however, they prove to be very useful to them if ingested. The Russian bacteriologist Ilja Metschnikov, a Nobel Prize winner in physiology and medicine who was interested in the discovery of Dr. Stamen Grigorov, combined an epidemiological knowledge of the high life expectancy of Bulgarian farmers with their everyday food. He relates the consumption of yogurt with the probability of long life. According to his investigations in 36 countries, Bulgaria had more people aged 100 compared to the other countries.
